Cinco Sentidos 'Pechuga Guerrerense' Mezcal

We felt honoured to be invited to bottle a couple of batches of Refugio 'Don Cuco' Calzada's uniquely Guerrerense take on Pechuga. Refugio's Pechuga Guerrerense uses agave Papalote (a. Cupreata) as a base. Before the second distillation, he hangs a basket that includes a free-range hen, raisins, pineapples, cinnamon and almonds between the boiling chamber and hat of his still.
